Brut nature, extra-brut, brut: what dosage changes

Dosage refers to the amount of liqueur d'expédition added after disgorgement. A brut nature contains less than 3 grams of sugar per litre, with no added liqueur. Extra-brut ranges from 0 to 6 g/l, and classic brut from 6 to 12 g/l.

What dosage changes on the palate

This difference alters the perception of acidity: the lower the dosage, the more the natural acidity of the grape expresses itself without correction. Houses producing brut nature select plots and years where grape maturity allows them to forego dosage.

Pairing with Côte d'Azur cuisine

On the Côte d'Azur, where meals are often enjoyed outdoors alongside seafood dishes (fish, shellfish), a brut nature or extra-brut complements the local cuisine better than a classic brut, whose residual sugar can weigh down the pairing.
