Preserving an opened bottle of Champagne

An opened bottle of Champagne gradually loses pressure, even when stoppered. Using a hermetic stopper designed for Champagne (spring-loaded, not a standard wine cork), carbon dioxide loss is slowed down but not eliminated.

Actual preservation time

In the refrigerator, between 4 and 6°C, a bottle retains acceptable effervescence for 24 to 48 hours. Beyond this period, the bubbles diminish significantly, although the wine remains consumable.

Role of temperature

Temperature plays a direct role: the lower it is, the more CO2 remains dissolved in the liquid.

The spoon in the bottle neck

Using a spoon in the bottle neck is not recommended — despite its popularity, this method has no proven effect on preserving bubbles. The only factors that matter are the seal of the stopper and the storage temperature.
